Spice Up Your Life…

Bit of a different blog post this one, but just thought I’d share a very quick & easy recipe I tried out tonight. Spicy Egg & Lentil Curry – perfect for a cold night…

You’ll need an onion, a couple of cloves of garlic, grated fresh ginger, 3 or 4 beef tomatoes (quartered), box of button mushrooms, puy lentils (I used a vacuum packet), garam masala, chilli flakes, a tiny bit of veg stock and 2 or 3 hardboiled eggs.

Hard boil the eggs and leave to cool down. Brown the onions, add the ginger & spices. Throw in the tomatoes & mushrooms and simmer. Add veg stock & lentils and simmer – I let it all simmer for about 30 mins then served, adding the halved hardboiled eggs on top of the dished up curry…

And voila – hot, spicy and very easy…
